After working more than a decade in the restaurant industry and being deeply passionate about the culinary world, I understand the importance of having reliable, high-quality tools.
A true passion was born in 2021 when I received my first Japanese knife. From the very first cut, I knew there was something special.
I began learning about Japanese forging traditions and sharpening techniques, and quickly developed a deep appreciation for the culture of craftsmanship and the transmission of ancestral knowledge.
Over the following two years, I started maintaining my own knives, then those of family and friends. I also began restoring old Japanese knives while completing training to gain hands-on experience with water stones.
After building the experience and confidence required to offer high-quality sharpening services to home cooks and professional chefs, I founded Hagane Affûtage in February 2024.
Hagane (鋼) means “steel” in Japanese.
